Description

This ingenious corn ribs recipe delivers huge flavor with irresistibly charred edges, a sweet and spicy kick from the Chili Honey Brush, and a vibrant zing from the Lime Glitter, transforming simple corn into a family-friendly favorite.

Ingredients

Scale
  • 46 ears fresh corn on the cob (approx. 600-900g)
  • 0.25 cup pure honey (60ml)
  • 1 tsp chili powder (5g) or sriracha to taste
  • 1 Tbsp apple cider vinegar (15ml)
  • 0.5 tsp salt, plus more for seasoning corn (3g)
  • 1 fresh lime, zest for Lime Glitter, wedges for serving
  • 0.25 tsp granulated sugar (1g)
  • 0.25 tsp flaky sea salt (1g)
  • 1 Tbsp olive oil (15ml)

Instructions

  1. Prep the Corn: Remove husks and silk from 4-6 ears of corn. On a sturdy cutting board, stand each shucked ear on its wide end. Using a sharp 9-inch chef’s knife, cut downwards through the center. Lay the halves flat and cut each half into two wedges lengthwise, creating eight ribs per ear. (Tip: placing corn on a damp paper towel helps prevent slipping).
  2. Make the Chili Honey Brush: In a small bowl, whisk together 0.25 cup (60ml) pure honey, 1 tsp (5g) chili powder (or sriracha), 1 Tbsp (15ml) apple cider vinegar, and 0.5 tsp (3g) salt until well combined and smooth to create the Chili Honey Brush.
  3. Season the Corn: In a large bowl, toss the prepared corn ribs with 1 Tbsp (15ml) olive oil, a generous pinch of salt, and freshly ground black pepper until evenly coated.
  4. Cook to Perfection: For oven roasting, preheat oven to 400ยฐF (200ยฐC). Arrange seasoned corn ribs in a single layer on a large baking sheet. Roast for 15-20 minutes, flipping halfway, until edges are tender and slightly charred. Brush generously with the Chili Honey Brush in the last 5 minutes, allowing it to caramelize. (If corn looks dry, splash in 1-2 Tbsp water before roasting to prevent scorching.) For air frying, air fry at 375ยฐF (190ยฐC) for 10-15 minutes, shaking the basket occasionally, until corn is tender and golden brown. Brush with the Chili Honey Brush in the last 2 minutes.
  5. Dazzle with Lime Glitter: Transfer cooked corn ribs to a serving platter. In a tiny bowl, combine the zest of one fresh lime, 0.25 tsp (1g) granulated sugar, and 0.25 tsp (1g) flaky sea salt to create the vibrant Lime Glitter. Sprinkle generously over the hot corn ribs.

Notes

For a vegan option, substitute honey with agave nectar or maple syrup. Adjust chili powder to taste. Use a damp paper towel under corn for easier cutting. If roasting, add water if corn appears dry. All ingredients are naturally gluten-free. Serve with lime wedges.
