- 3 Tbsp (45ml) olive oil
- 2 tsp paprika
- 1 tsp salt
- 0.5 tsp black pepper, freshly ground
- 1–2 Tbsp chicken broth (optional)

- Prep Ingredients: Cut 0.5-inch chicken medallions and 1-inch sweet potato cubes for even roasting. In separate bowls, toss sweet potatoes with 1 Tbsp olive oil, 1 tsp paprika, 0.5 tsp salt, 0.25 tsp pepper. Season chicken similarly in its own bowl.
