Instructions

  1. Prep Vegetables: Chop onions, carrots, and celery into small, uniform pieces. Mince garlic. Peel and cube sweet potatoes.
  2. Build Savory Lentil Base: In a large skillet or pot, sautรฉ chopped onions, carrots, and celery in 1 Tbsp olive oil over medium heat for 7-8 minutes until softened. Add minced garlic and cook for 1 minute. Stir in lentils, vegetable broth, tomato paste, dried thyme, dried rosemary, and bay leaf. Bring to a gentle simmer, cover, and cook until lentils are tender and most liquid is absorbed (20-25 minutes).
  3. Create Sweet Potato Mash: While the lentil base cooks, boil or steam cubed sweet potatoes until very tender (10-15 minutes). Drain well. Mash with dairy-free milk, vegan butter, and a pinch of salt until smooth and creamy.
