Ingredients

- 1 Tbsp baking powder

- 0.75 cup whole milk (180ml), cold
- 1 Tbsp honey
Instructions
- Combine Dry Ingredients: Whisk together 2 cups of all-purpose flour, 1 Tbsp baking powder, 0.5 tsp salt, and 1 tsp optional granulated sugar in a large bowl for 30 seconds, until well combined and airy.
- Cut In Cold Butter: Add 0.5 cup of very cold, cubed unsalted butter to the dry mixture. Use a pastry blender or fingertips to work the butter in until the mixture resembles coarse meal with some pea-sized pieces of butter still visible, taking about 3-5 minutes.
- Add Milk: Gradually pour in 0.75 cup of cold whole milk, mixing gently with a fork or spatula just until a shaggy, cohesive dough forms, about 1-2 minutes.
- Gently Knead And Shape: Turn the dough onto a lightly floured surface. Gently pat or roll the dough to about a 1-inch thickness. Fold the dough in half, then pat/roll again. Repeat this folding and patting one more time to create extra flaky layers.
- Cut Biscuits: Using a 2-3 inch biscuit cutter (or a sharp knife for squares), press straight down without twisting into the dough. Place the cut biscuits onto a parchment-lined baking sheet, ensuring they touch slightly for softer sides, taking 1-2 minutes.
- Bake To Golden: Preheat your oven to 425F. Bake the biscuits for 12-15 minutes, until their tops are golden brown and the sides are slightly risen.
- Apply Golden Honey Brush: In the last 2-3 minutes of baking, gently remove the baking sheet. Brush the tops of the hot biscuits with 1 Tbsp of honey for a beautiful golden honey brush glaze, then return to the oven to finish, watching for a rich, amber glow.
