  • 200 g / 1 large ripe mango, peeled and diced (about 1.5 cups)
  • 60 ml / 0.25 cup fresh lime juice (from 23 limes)
  • 30 ml / 2 tablespoons pure maple syrup
  • 5 g / 1 teaspoon grated fresh ginger
  • 3 g / 1 clove garlic, minced
  • 1 g / 0.5 teaspoon red pepper flakes (or to taste)
  • 15 ml / 1 tablespoon water (if needed for consistency)
  • 15 g / 0.25 cup fresh cilantro, finely chopped
  • 1 lime, cut into wedges, for garnish

Instructions

  1. Prep Your Chicken: Pat the chicken breasts dry thoroughly with paper towels. Season both sides evenly with fine sea salt and freshly ground black pepper.
  2. Sear the Chicken: Heat the olive oil in a large non-stick skillet over medium-high heat. Add the seasoned chicken breasts and sear for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 74 degrees C / 165 degrees F). Remove chicken from the skillet and set aside on a plate, tented with foil, to rest.
  3. Prepare the Tropical Mango-Lime Glaze: While the chicken rests, in a blender, combine the diced ripe mango, fresh lime juice, pure maple syrup, grated fresh ginger, minced garlic, and red pepper flakes. Blend until completely smooth and a vibrant, uniform puree forms. If it looks too thick, add 15 ml / 1 tablespoon of water to achieve a pourable consistency.
  4. Simmer the Glaze: Pour the mango-lime puree into the same skillet over medium heat. Bring to a gentle simmer, then reduce the heat to low and cook for 5-7 minutes, stirring occasionally, until the glaze thickens slightly and becomes glossy. It should be thick enough to coat the back of a spoon.
  5. Coat the Chicken: Return the rested chicken breasts to the skillet with the glaze. Turn to coat each piece thoroughly with the warm, glossy sauce. Cook for 1-2 minutes, just to warm the chicken through and ensure it’s beautifully coated.
  6. Plate and Garnish: Arrange a pan-seared chicken breast on a wide plate. Generously spoon the glossy Tropical Mango-Lime Glaze over the chicken.
