Ingredients

  • 56 fresh sage leaves, medium size
  • 0.5 cup heavy cream, minimum 35 percent fat
  • 1 tablespoon powdered sugar
  • 0.5 teaspoon alcohol-free vanilla extract
  • Zest of 0.5 medium lemon (0.5 teaspoon)
  • Chilled sparkling water
  • Ice cubes
  • 23 fresh blackberries, for garnish
  • 1 small fresh sage leaf, for garnish

Instructions

  1. Prepare Blackberry Sage Syrup: In a small saucepan, combine blackberries, granulated sugar, water, and sage leaves. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Continue simmering for 8-10 minutes, or until blackberries soften significantly.
  2. Mash and Strain Syrup: Gently mash the softened berries with a spoon. Remove from heat and steep for 15 minutes to infuse sage flavor. Pour mixture through a fine-mesh sieve into a heatproof bowl, pressing solids to extract all liquid before discarding solids and sage leaves.
  3. Chill Syrup and Prepare Cream: Allow syrup to cool completely to room temperature, then transfer to an airtight container and refrigerate for at least 1 hour until thoroughly chilled. In a separate chilled medium bowl, combine heavy cream, powdered sugar, vanilla extract, and lemon zest. Beat on medium-high speed until soft peaks form.
  4. Assemble Italian Cream Soda: Fill a tall glass generously with ice cubes. Pour 2-3 tablespoons of chilled Blackberry Sage Syrup over the ice. Slowly top with 0.75-1 cup of chilled sparkling water, leaving space at the top for the cream.
  5. Add Lemon Cream and Garnish: Gently dollop 2-3 tablespoons of prepared Lemon Cream over the sparkling water. Garnish with 2-3 fresh blackberries and a small fresh sage leaf.

Notes
