This Smoky Honey-Glazed Blueberry Peach Feta Salad is a vibrant mix of sweet, smoky, and savory flavors, perfect as a side dish or light lunch. It combines ripe peaches, juicy blueberries, salty feta, and crunchy pumpkin seeds in a luscious glaze.


Ingredients

  • 150g (5.3oz) Fresh Blueberries: firm and deep blue
  • 300g (10.5oz) Ripe Peaches, Sliced: fragrant and slightly soft
  • 30g (1oz) Thinly Sliced Red Onion: can be soaked in cold water
  • 100g (3.5oz) Feta Cheese, Crumbled: halal-certified, packed in brine
  • 30g (1oz) Toasted Pumpkin Seeds: toasted for enhanced flavor
  • 10g (0.35oz) Fresh Mint Leaves, Torn
  • 100g (3.5oz) Peach Purรฉe: blended from ripe peach
  • 100g (3.5oz) Blueberry Purรฉe: blended
  • 2 Tbsp (30ml) Honey: local honey recommended
  • 0.5 tsp (1.5g) Smoked Paprika
  • 1 Tbsp (15ml) Apple Cider Vinegar
  • 1 Tbsp (15ml) Extra-Virgin Olive Oil
  • Salt and Pepper to Taste

Instructions

  1. Prepare Purรฉes: Blend peach and blueberries until smooth. Strain for a smoother glaze.
  2. Combine Glaze: Combine purรฉes, honey, paprika, vinegar, oil, salt, and pepper in a saucepan.
  3. Simmer Glaze: Heat over medium-low, stirring constantly for 4-5 minutes until thickened and glossy.
  4. Keep Warm: Remove from heat and keep warm while preparing the salad.

Notes

For a milder onion flavor, soak the slices in cold water for 10 minutes. Toast pumpkin seeds to enhance their flavor. Adjust seasoning to your preference.
