  • Zest of 1 lemon: yellow part only
  • 30 ml (2 tbsp) fresh lemon juice
  • 8 g (2 tbsp) fresh basil leaves, torn
  • 15 g (1 tbsp) pine nuts, toasted
  • Salt and freshly ground black pepper: to taste

Instructions

  1. Prep Cucumbers & Mozzarella: Slice cucumbers and mozzarella into 0.5 cm rounds; pat cucumbers dry.
  2. Make the Glaze: Whisk together olive oil, honey, paprika, garlic, lemon zest, and juice; season with salt and pepper.
  3. Arrange Salad: Layer cucumber and mozzarella rounds on a platter, slightly overlapping.
  4. Drizzle with Glaze: Coat each slice with the honey-smoked paprika glaze.
