- 240 ml (1 cup) whole milk
- 120 ml (ยฝ cup) heavy cream
- 150g (1 cup) cheddar cheese, shredded
- 100g (1 cup) mozzarella cheese, shredded
- 120g (ยฝ cup) roasted red pepper purรฉe
- 5 ml (1 tsp) smoked paprika
- 2.5 ml (ยฝ tsp) salt
- 1.25 ml (ยผ tsp) black pepper
- 30g (2 Tbsp) unsalted butter, melted
- 50g (ยฝ cup) panko breadcrumbs
- 5 ml (1 tsp) dried thyme
- 50 ml (2 Tbsp) olive oil, plus extra for drizzling
- 15 ml (1 Tbsp) fresh chives, chopped
Instructions
- Preheat & Grease: Preheat oven to 180ยฐC (350ยฐF) and grease a 22cm (9-inch) baking dish.
- Whisk Egg Base: Whisk eggs, milk, cream, salt, and pepper in a bowl.
- Add Cheese: Stir in cheddar and mozzarella cheese.
- Prepare Pepper Swirl: Combine red pepper purรฉe and smoked paprika.
- Layer & Swirl: Pour half the egg mixture into the dish, dollop pepper purรฉe, and swirl gently.
- Top & Crumble: Pour remaining egg mixture over the swirl.
- Make Panko Topping: Combine panko, melted butter, thyme, and olive oil.
- Sprinkle & Bake: Sprinkle topping over the bake and bake for 30-35 minutes.
- Rest & Garnish: Rest for 5 minutes, drizzle with olive oil, and garnish with chives.
