  • 50 g (ยผ cup) Granulated Sugar
  • 1 tsp Baking Powder
  • ยผ tsp Fine Sea Salt
  • 30 g (2 tbsp) Unsalted Butter: melted and cooled
  • 100 g (3ยฝ oz) Cream Cheese: softened
  • 2 tbsp Honey
  • 1 tsp Lemon Zest (about half a lemon)
  • 1 tbsp Fresh Lemon Juice
  • 2 tbsp Sliced Almonds: toasted
  • Additional Pinch of Lemon Zest: for garnish

Instructions

  1. Preheat and Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a baking dish.
  2. Combine Dry: Whisk flour, baking powder, and salt.
  3. Mix Wet: Beat eggs and sugar, then whisk in milk and butter.
  4. Add Cottage & Blueberries: Gently fold in cottage cheese and blueberries.
  5. Combine Mixtures: Add dry ingredients to wet, mixing gently.
  6. Make Lemon Swirl: Beat cream cheese, honey, lemon zest, and juice.
  7. Assemble & Swirl: Spread batter, drop swirl mixture, and gently swirl.
  8. Bake: Bake for 30-35 minutes, until golden brown.
  9. Cool & Garnish: Cool for 10 minutes, garnish with lemon zest and almonds.

Notes

For best results, drain the cottage cheese well to avoid a soggy bake. Toasting almonds enhances their flavor.
