  • 2 tbsp (30 ml) sour cream
  • 1 chipotle pepper in adobo, minced (or 1 tsp chipotle powder)
  • 1 tbsp (15 ml) lime juice (for crema)
  • 1 tsp (5 g) honey
  • Pinch of salt (for crema)
  • ยฝ cup (75 g) fresh pineapple, diced
  • ยผ cup (40 g) red bell pepper, finely diced
  • 2 tbsp (30 ml) red onion, minced
  • 1 tbsp (15 ml) cilantro, chopped
  • 1 tsp (5 ml) lime juice (for salsa)
  • Pinch of salt (for salsa)
  • Fresh cilantro leaves, torn, for garnish
  • 2 lime wedges, for serving

Instructions

  1. Marinate Chicken: Combine olive oil, cumin, paprika, garlic powder, onion powder, salt, pepper, and lime juice. Coat chicken and marinate for 15-30 minutes.
  2. Make Chipotle Lime Crema: Whisk together mayonnaise, sour cream, chipotle pepper, lime juice, honey, and salt. Refrigerate until ready to use.
  3. Prepare Pineapple Salsa: Combine pineapple, bell pepper, red onion, cilantro, lime juice, and salt. Let sit for 10 minutes.
