- Black Pepper (ยฝ tsp / 2g), freshly ground
- Diced Tomatoes (800g / 28oz), canned, with juices
- Cannellini Beans (400g / 14oz), canned, drained and rinsed
- Vegetable Broth (4 cups / 960ml), low-sodium
- Heavy Cream (120ml / ยฝ cup), halal-certified
- Parmesan Cheese (60g / 2oz), freshly grated, divided
- Lemon Juice (1 tbsp / 15ml), fresh
- Dried Basil (1 tsp / 5g) or Fresh Basil (1 tbsp)
- Crusty Bread (4 slices / 60g), day-old, cubed
- Butter/Olive Oil (1 tbsp / 15ml), for croutons
- Garlic Powder (1 tsp / 5g), for croutons
- Fresh Basil Leaves, torn
Instructions
- Sautรฉ Aromatics: Heat oil, sautรฉ onion until translucent (5-6 minutes).
- Bloom Spices: Add garlic & paprika; cook until fragrant (30 seconds).
- Simmer Soup Base: Add tomatoes, beans, broth; simmer for 15 minutes.
- Prepare Cream Swirl: Whisk cream, Parmesan, paprika; warm gently (3-4 minutes).
- Season & Blend: Season with salt, pepper, lemon, basil; partially puree.
- Make Croutons: Toss bread with butter/oil, garlic powder; bake until crispy (8-10 minutes).
- Assemble & Serve: Ladle soup, swirl cream, top with croutons, Parmesan, basil.
