Ingredients
- 500 g frozen tater tots
- 6 large eggs
- 240 ml whole milk
- 200 g shredded cheddar cheese
- 150 g shredded mozzarella cheese
- 1 small diced roasted red bell pepper
- 1 tsp smoked paprika
- 120 ml heavy cream
- 30 g unsalted butter
- 15 g all-purpose flour
- 1 small finely chopped onion
- 1 minced garlic clove
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tbsp chopped fresh chives
Instructions
- Prep Oven & Dish: Preheat oven to 190ยฐC (375ยฐF) and grease a 9×13 inch baking dish.
- Sautรฉ Aromatics: Melt butter, sautรฉ onion and garlic until translucent.
- Make Roux: Stir in flour and cook for 1 minute.
- Create Red Pepper Sauce: Whisk in cream, add red pepper, paprika, salt, and pepper; simmer until thickened.
- Whisk Egg Mixture: Combine eggs, milk, salt, cheddar, and mozzarella.
- Layer Casserole: Spread tater tots in dish, pour egg mixture over them.
- Swirl Sauce: Drop spoonfuls of red pepper sauce and swirl into egg mixture.
- Bake: Bake uncovered for 35-40 minutes, until golden and set.
- Rest & Serve: Let rest for 5 minutes before slicing and garnishing with chives.
