  • 4 Large Eggs
  • 1 tsp Alcoholโ€‘free Vanilla Extract
  • 120 g (1 cup) Sour Cream (optional)
  • 100 g (ยฝ cup) Honey (for caramel swirl)
  • 50 g (ยผ cup) Brown Sugar (for caramel swirl)
  • 30 ml (2 Tbsp) Water (for caramel swirl)
  • Juice of ยฝ Lime (for caramel swirl)
  • 100 g (ยฝ cup) Fresh Cherries, Pitted and Chopped (for caramel swirl)

Instructions

  1. Prepare Oven & Water Bath: Preheat oven to 160ยฐC (325ยฐF) and create a water bath.
  2. Make Pistachio Crust: Combine pistachios, crumbs, butter, and sugar; press into pan.
  3. Bake Crust: Bake crust for 8 minutes, then cool.
  4. Cream Cheesecake Base: Beat cream cheese until smooth, then add sugars and honey.
  5. Add Citrus & Vanilla: Incorporate lemon & lime zest and juice, and vanilla.
  6. Incorporate Eggs: Add eggs one at a time, mixing gently.
  7. Add Sour Cream: Gently fold in sour cream (optional).
  8. Prepare Caramel Swirl: Cook honey, sugar, water, and lime juice until thickened; add cherries.
  9. Assemble & Swirl: Layer batter and swirl in caramel.
  10. Bake in Water Bath: Bake for 55-60 minutes until set.
  11. Cool Slowly: Cool in oven for 1 hour, then at room temperature.
