- 120 g (4.2 oz) Graham Cracker Crumbs (about 1 cup)
- 60 g (2.1 oz) Unsalted Butter, Melted
- 30 g (1 oz) Granulated Sugar (for crust)
- 900 g (2 lb) Cream Cheese, Softened
- 200 g (1 cup) Granulated Sugar
- 150 g (0.75 cup) Honey
- Zest of 1 Lemon
- Juice of 1 Lemon (โ2 Tbsp)
- Zest of 1 Lime
- Juice of 1 Lime (โ2 Tbsp)
- 4 Large Eggs
- 1 tsp Alcoholโfree Vanilla Extract
- 120 g (1 cup) Sour Cream (optional)
- 100 g (ยฝ cup) Honey (for caramel swirl)
- 50 g (ยผ cup) Brown Sugar (for caramel swirl)
- 30 ml (2 Tbsp) Water (for caramel swirl)
- Juice of ยฝ Lime (for caramel swirl)
- 100 g (ยฝ cup) Fresh Cherries, Pitted and Chopped (for caramel swirl)
Instructions
- Prepare Oven & Water Bath: Preheat oven to 160ยฐC (325ยฐF) and create a water bath.
- Make Pistachio Crust: Combine pistachios, crumbs, butter, and sugar; press into pan.
- Bake Crust: Bake crust for 8 minutes, then cool.
- Cream Cheesecake Base: Beat cream cheese until smooth, then add sugars and honey.
- Add Citrus & Vanilla: Incorporate lemon & lime zest and juice, and vanilla.
- Incorporate Eggs: Add eggs one at a time, mixing gently.
- Add Sour Cream: Gently fold in sour cream (optional).
- Prepare Caramel Swirl: Cook honey, sugar, water, and lime juice until thickened; add cherries.
- Assemble & Swirl: Layer batter and swirl in caramel.
- Bake in Water Bath: Bake for 55-60 minutes until set.
- Cool Slowly: Cool in oven for 1 hour, then at room temperature.
- Chill Thoroughly: Refrigerate for at least 4 hours.
- Serve & Garnish: Garnish and serve.
