- 30 ml (2 tbsp) vegetable oil
- 3 cloves garlic, minced (1 tbsp)
- 2 Thai bird chilies, thinly sliced (optional)
- 1 small shallot, finely chopped (2 tbsp)
- 30 ml (2 tbsp) fish sauce
- 15 ml (1 tbsp) soy sauce
- 5 ml (1 tsp) palm sugar
- 30 g (1 cup) Thai basil leaves
- 200 ml (ยพ cup) full-fat coconut milk
- 5 ml (1 tsp) lime zest
- 15 ml (1 tbsp) lime juice
- 15 g (2 tbsp) toasted shredded coconut
- A few basil leaves, for garnish
Instructions
- Prep Ingredients: Mince garlic, slice chilies, zest lime, and juice lime.
- Sautรฉ Aromatics: Heat oil, sautรฉ garlic, chilies, and shallot until fragrant.
- Cook Chicken: Add chicken, break it up, and cook until no longer pink.
- Build Flavor: Stir in fish sauce, soy sauce, and palm sugar.
- Prepare Swirl: Simmer coconut milk, lime zest, and lime juice until thickened.
- Wilt Basil & Swirl: Add basil, wilt briefly, and swirl in coconut-lime sauce.
- Plate & Garnish: Serve with toasted coconut and basil leaves.
Notes
For the most authentic flavor, use fresh Thai basil and full-fat coconut milk. Adjust the amount of chili to your spice preference.
