- 200 g (7 oz) plain digestive biscuits, crushed
- 80 g (3 oz) unsalted butter, melted
- 400 g (14 oz) cream cheese, softened
- 150 g (5.3 oz) granulated sugar
- 2 large eggs (โ100 g / 3.5 oz)
- 1 tsp (5 ml) alcoholโfree vanilla extract
- 1/4 tsp (1.25 ml) fine sea salt
- 150 g (5.3 oz) fresh raspberries
- 1 tbsp (15 ml) granulated sugar (optional)
- 120 g (4.2 oz) halalโcertified white chocolate, chopped
- 30 g (1 oz) heavy cream
- 30 g (1 oz) pistachios, finely chopped
Instructions
- Prepare the Crust: Preheat oven to 160ยฐC (325ยฐF), grease a 20 x 30 cm pan, and line with parchment.
- Combine Crust Ingredients: Mix crushed biscuits and melted butter until moistened.
- Press and Bake Crust: Press mixture into pan and bake for 10 minutes until golden. Cool completely.
- Make Cheesecake Filling: Beat cream cheese, sugar, vanilla, and salt until smooth.
- Incorporate Eggs: Add eggs one at a time, mixing until just combined.
- Spread Filling: Pour batter over crust and spread evenly.
- Prepare Raspberry Puree: Blend raspberries until smooth, strain if desired, and add sugar if needed.
- Make White Chocolate Ganache: Melt white chocolate and cream over simmering water, stirring until smooth.
- Swirl Raspberry & Chocolate: Drop raspberry puree and ganache over batter and swirl gently.
- Bake Cheesecake Bars: Bake for 35-40 minutes until edges are set and center wobbles.
- Cool & Chill: Cool in oven for 1 hour, then at room temperature, and refrigerate for at least 4 hours.
- Cut & Serve: Lift out with parchment, cut into bars, and garnish with raspberries and pistachios.
Notes
For a crack-free cheesecake, cool gradually and avoid opening the oven frequently. Using full-fat cream cheese yields the best texture.
