- 2 large eggs

- 250 g (2 cups) all-purpose flour
- 5 mL (1 teaspoon) ground cardamom
- 5 mL (1 teaspoon) baking powder
- 2.5 mL (0.5 teaspoon) fine sea salt
- 180 g (1.5 cups) powdered sugar
- 45 mL (3 tablespoons) milk, any type
- 5 mL (1 teaspoon) alcohol-free rose water
- Pinch of ground cardamom, for glaze
- 50 g (0.5 cup) unsalted pistachios, finely chopped
Instructions
- Prep Your Pan: Preheat your oven to 175 degrees C (350 degrees F). Lightly grease a 23×33 cm (9×13 inch) baking pan and line it with parchment paper, allowing an overhang on the sides for easy lifting.
- Melt Butter & Sugar: In a large bowl, combine the melted unsalted butter, light brown sugar, and granulated sugar. Whisk vigorously until smooth and glossy, about 1-2 minutes.
- Add Wet Ingredients: Add the large eggs one at a time, whisking well after each addition until fully incorporated. Stir in the alcohol-free vanilla extract until blended.
- Mix Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, 5 mL (1 teaspoon) ground cardamom, baking powder, and fine sea salt until evenly distributed.
- Combine & Mix Batter: Gradually add the dry ingredients to the wet, mixing with a spatula or wooden spoon until just combined. Do not overmix; the batter will be thick and gooey.
- Bake Blondies: Pour the batter evenly into the prepared baking pan. Bake for 25-30 minutes, or until the edges are golden brown and a wooden skewer inserted into the center comes out with moist crumbs attached.
- Cool & Glaze: Remove blondies from the oven and cool in the pan for at least 30 minutes. Prepare glaze by whisking powdered sugar, milk, alcohol-free rose water, and a pinch of cardamom.
