- 250 g (1 cup) Cottage Cheese: well-drained, full-fat recommended
- 2 Large Eggs: at room temperature
- 120 ml (ยฝ cup) Whole Milk
- 60 g (ยฝ cup) All-Purpose Flour
- 50 g (ยผ cup) Granulated Sugar
- 1 tsp Baking Powder
- ยผ tsp Fine Sea Salt
- 30 g (2 tbsp) Unsalted Butter: melted and cooled
- 100 g (3ยฝ oz) Cream Cheese: softened
- 2 tbsp Honey
- 1 tsp Lemon Zest (about half a lemon)
- 1 tbsp Fresh Lemon Juice
- 2 tbsp Sliced Almonds: toasted
- Additional Pinch of Lemon Zest: for garnish
Instructions
- Preheat and Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a baking dish.
- Combine Dry: Whisk flour, baking powder, and salt.
- Mix Wet: Beat eggs and sugar, then whisk in milk and butter.
- Add Cottage & Blueberries: Gently fold in cottage cheese and blueberries.
- Combine Mixtures: Add dry ingredients to wet, mixing gently.
- Make Lemon Swirl: Beat cream cheese, honey, lemon zest, and juice.
- Assemble & Swirl: Spread batter, drop swirl mixture, and gently swirl.
- Bake: Bake for 30-35 minutes, until golden brown.
- Cool & Garnish: Cool for 10 minutes, garnish with lemon zest and almonds.
Notes
For best results, drain the cottage cheese well to avoid a soggy bake. Toasting almonds enhances their flavor.
