- 6 large eggs
- 1.25 cup (300ml) whole milk
- โ cup (150ml) heavy cream
- ยผ cup (80g) granulated sugar
- 1 tsp (5ml) ground cinnamon
- 1 tsp (5ml) ground cardamom (custard)
- 1 tsp (5ml) vanilla extract
- Pinch of salt
- 7 oz (200g) softened cream cheese
- ยผ cup (60ml) honey
- ยฝ tsp (2.5ml) ground cardamom (cream)
- 2 tbsp (30ml) milk (for cream)
- ยผ cup (30g) toasted sliced almonds
- Zest of 1 orange
- Fresh mint leaves (optional)
Instructions
- Preheat & Grease: Preheat oven to 350ยฐF (175ยฐC) and grease a baking dish.
- Whisk Custard: Combine eggs, milk, cream, sugar, cinnamon, cardamom, vanilla, and salt.
- Soak Croissants: Add croissant cubes to custard; let sit for 10 minutes.
- Assemble Casserole: Pour mixture into baking dish and spread evenly.
- Make Cream: Beat cream cheese, honey, cardamom, and milk until smooth.
- Swirl Cream: Drop cream over casserole and swirl gently.
- Bake: Bake for 35-40 minutes, until golden brown and set.
- Rest & Garnish: Let rest for 10 minutes; garnish with almonds, orange zest, and mint.
Notes
Using day-old croissants prevents sogginess. Don’t overmix the cream swirl for a rustic look.
