Description

A hearty, high-protein, low-carb gumbo featuring chicken thighs and sausage. This recipe uses an almond flour roux for thickening and is finished with a bright lime-cilantro crema for a modern twist.

  • 14.5 oz can diced tomatoes, undrained
  • 8 oz sliced okra, fresh or frozen
  • 1/2 tsp xanthan gum (optional)
  • 1/2 cup avocado oil mayonnaise
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Make Keto Roux: Heat oil in a large pot over medium heat. Gradually whisk in almond flour, stirring constantly for 10-15 minutes until it reaches a rich, peanut butter brown color.
  2. Sautรฉ Aromatics: Add the diced onion, celery, and green bell pepper to the pot. Sautรฉ for 8-10 minutes, stirring occasionally, until the vegetables are softened and translucent.
  3. Brown Meats: Add chicken pieces and sausage to the pot. Cook for 5-7 minutes, stirring until the chicken is lightly browned and the sausage is cooked through.
  4. Simmer Gumbo Base: Stir in Cajun seasoning, thyme, and bay leaves; cook for 1 minute until fragrant. Pour in chicken stock and diced tomatoes. Bring to a simmer, then reduce heat, cover, and cook for 30 minutes to 1 hour to develop flavors.
  5. Add Okra and Thicken: Add sliced okra to the gumbo. If desired, sprinkle in xanthan gum and whisk gently. Continue to simmer uncovered for 15-20 minutes, or until the gumbo reaches the desired thickness and the okra softens.
  6. Prepare Crema and Serve: While gumbo simmers, whisk together mayonnaise, lime juice, and cilantro for the crema. Remove bay leaves from gumbo and season with salt/pepper. Serve hot, optionally over cauliflower rice, drizzled with crema.

Notes

The vegetables must be fully softened before adding the meat for proper texture and flavor. The lime-cilantro crema brightens the dish and balances the richness. This gumbo freezes well without the okra or crema.
