Description

This margarita pizza recipe with blistered tomato basil mosaic is a vibrant, crowd-pleasing dinner. It transforms simple ingredients into a healthy, satisfying meal perfect for busy families.

Ingredients

Scale
  • 1 lb (450g) Fresh Pizza Dough
  • 1 pint (about 2 cups/300g) Sweet Cherry Tomatoes
  • 8 oz (225g) Fresh Mozzarella, ball, packed in water
  • 0.5 cup Fresh Basil Leaves, packed
  • 2 Tbsp (30ml) Olive Oil
  • 2 cloves Minced Garlic (or 0.5 tsp garlic powder)
  • 0.5 tsp Sea Salt, plus more to taste
  • 0.25 tsp Black Pepper, freshly ground

Instructions

  1. Preheat Oven: Preheat your oven to 450ยฐF (230ยฐC) with a pizza stone or baking steel placed inside for at least 30 minutes.
  2. Blister Tomatoes: In a medium bowl, toss cherry tomatoes with 1 Tbsp olive oil, minced garlic, 0.25 tsp sea salt, and 0.25 tsp black pepper until evenly coated. Spread them in a single layer on a sheet pan and blister in the preheated oven for 8-10 minutes, until they soften and their skins burst.
  3. Prepare Dough: On a piece of parchment paper, gently stretch or roll out the pizza dough into your desired shape (12-14 inches round or rectangular), flouring hands lightly to prevent sticking.
  4. Assemble Pizza: Drizzle the dough with the remaining 1 Tbsp olive oil. Evenly scatter the blistered tomatoes over the dough, then tear the fresh mozzarella into small pieces and distribute them across the top.
  5. Bake Pizza: Carefully slide the parchment paper with the pizza onto your hot pizza stone or baking steel. Bake for 10-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned. If the crust isn’t crisping as desired, bake for an additional 2-3 minutes directly on the stone after carefully removing the parchment.
  6. Finish and Serve: Remove the pizza from the oven. Immediately sprinkle generously with fresh basil leaves. Slice your homemade margarita pizza with blistered tomato basil mosaic into wedges and serve hot. For a slight kick, add a pinch of red pepper flakes before serving.

Notes

For an even richer tomato flavor, roast the tomatoes for an extra 5 minutes until they are deeply caramelized. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
