Ingredients
- 2 large English cucumbers (500 g / 1 lb): sliced into 0.5 cm (ยผ-inch) rounds
- 250 g (9 oz) fresh mozzarella cheese: sliced 0.5 cm (ยผ-inch) thick
- 60 ml (ยผ cup) extra-virgin olive oil: good quality
- 30 ml (2 tbsp) honey: mild-flavored
- 5 g (1 tsp) smoked paprika: sweet, hot, or blend
- 1 clove garlic, minced: fresh
- Zest of 1 lemon: yellow part only
- 30 ml (2 tbsp) fresh lemon juice
- 8 g (2 tbsp) fresh basil leaves, torn
- 15 g (1 tbsp) pine nuts, toasted
- Salt and freshly ground black pepper: to taste
Instructions
- Prep Cucumbers & Mozzarella: Slice cucumbers and mozzarella into 0.5 cm rounds; pat cucumbers dry.
- Make the Glaze: Whisk together olive oil, honey, paprika, garlic, lemon zest, and juice; season with salt and pepper.
- Arrange Salad: Layer cucumber and mozzarella rounds on a platter, slightly overlapping.
- Drizzle with Glaze: Coat each slice with the honey-smoked paprika glaze.
- Garnish & Serve: Sprinkle with basil and pine nuts; gently toss and serve immediately.
