- 5g (1 tsp) granulated sugar
- 5g (1 tsp) fine sea salt
- 180ml (ยพ cup) warm water (38ยฐC / 100ยฐF)
- 45ml (3 tbsp) olive oil
- 2 cloves garlic, minced
- 1 tbsp finely chopped fresh parsley
- 1 tsp fresh thyme leaves
- 50g (ยฝ cup) shredded mozzarella cheese (halal-certified)
- Pinch smoked paprika (optional)
Instructions
- Combine Dry Ingredients: Whisk flour, yeast, sugar, and salt.
- Activate Yeast: Add warm water and 15ml olive oil to dry ingredients; mix until shaggy.
- Knead Dough: Knead dough for 6-8 minutes until smooth and elastic.
- First Rise: Let dough rise in oiled bowl for 1 hour, or until doubled.
- Prepare Garlic-Herb Oil: Combine 15ml olive oil, garlic, parsley, thyme, and paprika.
- Divide and Shape: Divide dough into 4 pieces; flatten into 12cm rounds.
- Assemble Swirls: Brush with garlic-herb oil and sprinkle with mozzarella.
- Fold and Seal: Fold dough over; press edges to seal.
- Cook in Skillet: Cook oil-side down in skillet for 3-4 minutes until golden.
- Flip and Finish: Flip and cook other side for 3-4 minutes until golden and cheese is melted.
- Serve and Garnish: Brush with oil, sprinkle with cheese and paprika; serve warm.

For a crispier crust, ensure the skillet is hot before adding the bread. Don’t overcrowd the skillet; cook in batches if needed.
